I don’t have the chance to watch much on television lately but I happen to be watching a recorded episode of The Nate Berkus Show {don’t you love him?} last month and ended up making two recipes in one night. I previously posted about the Parmesan Crusted Chicken.
Today was a great day to spend time with my family. We went out for lunch with a friend and then came home later on. I was so relaxed from the day that I didn’t want to make dinner. Does this ever happen to you? When you take something out of the freezer because you’re trying to plan meals in advance and you either aren’t craving that recipe or just don’t feel like cooking?
Well I’m glad to say that I did make the Chicken Parmesan and now we will have leftovers for tomorrow. I think that you would like it. It’s very easy to prepare!
Yes, that’s tinfoil. Does anyone else line their oven? I know I can always rely on scour off to clean my oven and it smells amazing. How many people can say that about their oven cleaner?

sounds good to me and yes I have plenty of those days where I just don't want to deal with it. even if it's easier to have it planned ahead of time.

Sounds delicious! Chicken anything is a winner in my book. I'm actually taking it light this week since hubby is out of town. Simple meals and fast meals with the kids. They don't mind. ;)

Your recipe looks delicious. I've never had the chicken version. I've made eggplant parm. before though. I enjoy cooking dinner. I just hate all the prep work, especially cutting up vegetables.
